Cast Iron Fried Chicken
Recipe:
INGREDIENTS
Chicken Legs or Thighs
Hooters Wing Breading
Hooters Seasoning Salt
Peanut Oil
Buttermilk
INSTRUCTION
Remove chicken from the fridge roughly 20 minutes before cooking.
Add the oil and fill just under half of the pan. Heat the oil to 350 degrees.
Add your flour to one large bowl and the buttermilk to another bowl. First, lightly the coat the chicken with flour. Then, give it a good smothering in the buttermilk, and drip off excess milk. Finally, return it to the the breading for one last heavy coat. Shake it off.
If your pan is at 350 degrees. Go ahead and carefully add your chicken. Do not overcrowd. The oil should cover just over half of your chicken.
Cook on this side for 6-7 minutes. Then, flip each piece and cook for another 6-7 minutes, depending on the size of your chicken.
Its always good to remove a larger piece and test it for an internal temperature of 165 degrees.
Once chicken is done, remove it from the oil and place on a wire rack over a piece of foil to allow excess oil to drip off.
While it still fresh out of the oil. Sprinkle generously with Hooters Seasoning Salt for a crispy, flavorful, and perfectly seasoned piece of chicken. Enjoy.
